Brined Chicken Quarters

Use 1 qt of water for each lb of chicken.
For each qt of water, add 1/4 cup kosher salt and 1/4 cup sugar (I used brown)

I had 3 quarts of water and added a palm full of black pepper, oregano, garlic powder, about 3 tbs of Worcestershire sauce, about 2 tbs of soy sauce and a squirt of Siracha.

Heated grill for 15 minutes, turned off center burner and kept two side at almost high. Put chicken in center. Needed top cook 25-30 minutes, but check temperature.

Needed a little something, but wasn’t bad. Perhaps more siracha, soy, and garlic powder.
