Cowboy Caviar (Patti)

1/2 red onion, chopped (I used less)
1 can of black beans, drained (I would use 2 cans because I like black beans or you can add a can of black eyed peas, drained)
2 cups fresh or frozen corn (I used canned corn, drained)
1 red pepper, chopped
1 yellow pepper, chopped
1 green pepper, chopped (I used an orange pepper here)
2 bunches of cilantro, chopped
2 zests of lime
Lime juice— (1/4 cup? there were no directions on how much to use–just taste it and add more if necessary…)

Chill till ready to serve. Serve with Tostito scoops.

For a slightly different twist try some of these ingredients: chopped celery, chopped garlic, chopped jalapenos, or a can of diced tomatoes, or add Italian dressing, or a heated sugar, vinegar, oil dressing.

    This is Aunt Patti’s recipe. I haven’t made it myself, but she made it for Carleigh’s Birthday party and was ok.
