Creamy Garlic Salad Dressing

Posted on May 31, 2011

From Pelican Bend Restaurant, Isle of Capri (Marco Island), FL

But, since genester asked, I will now share the recipe for the best Creamy Roasted Garlic Dressing in the world. I can’t take full credit. We picked up most of the recipe from Pelican Bend Restaurant down in Marco Island, FL. (excellent food btw), but we made a few modifications to it:

Put the following in a blender:
16oz Mayonnaise (Dukes is the best if you can get it)
16oz Sour Cream (Real stuff, no fat-free crap)
3 tbs Sugar
3 tbs Roasted Garlic (from those jars of pre-minced in the oil)
1.5 tbs Garlic Powder
1 tbs Coarse Black Pepper
1 tsp Salt
Blend thoroughly for a few minutes. Chill for at least an hour. It get’s even better after a day,

I looked all over for this recipe after we got back from our 2010 trip and the only thing remotely close was this recipe which apparently is based on the Pelican Bend dressing. Of all places to find it, it was in a forum for slickdeals (a site for finding deals) about a deal on sweet cherry tomatoes and people started talking about creamy garlic dressing on tomatoes. Then someone posted this recipe.
