3 c. all-purpose flour

⅔ cup vegetable oil
⅓ cup. melted butter
2 Tablespoons. honey
4 eggs, beaten
2½ cups whole milk

Instructions

Preheat oven to 350 degrees and grease a 9×13 inch baking dish.
In a large mixing bowl, stir the cornmeal, flour, sugar, baking powder, and salt.
Pour in the vegetable oil, melted butter, honey, beaten eggs, and milk, and stir just until moistened.
Pour the batter into the greased baking dish and bake in 350 degree oven for 45 minutes. Watch the cornbread towards the end, you want it to be turning golden and starting to show some cracks.

Made yesterday. Baked 10+ minutes longer because the middle wouldn’t set, and even then it still wasn’t set but the top and sides were getting browner than I wanted so I pulled it out. What was on the edges was declicious, but the middle wasn’t done at all.

I halved the recipe and it came out awesome! Used an 8×8 pan and baked it for the 45 mins that the larger batch called for.

Delicious!!! The recipe was easy (I made a half batch and cooked as corn muffins), perfectly sweet and moist – just as promised! It was nice to eat cornbread that you can actually pick up without it disintegrating!

So I will probably try that next time and see what happens. No one else liked it so a half batch should be plenty.
